Heart-Shaped Lemon Cookies

We love breakfast, don’t you? These heart-shaped, unmistakeably lemon-scented shortbread cookies embody the essence of a sweet awakening. On St. Valentines’ Day, pamper your beloved by serving them for breakfast, or with hot tea in the afternoon. You’ll fall in love with them too!

Ingredients (serves 6)

  • 400 gr. pastry flour (Italian type “00”)
  • 240 gr. sugar
  • 200 gr. butter
  • 1 whole egg
  • 2 egg yolks
  • grated peel of 1 orange
  • 3 tablespoons of Limmi lemon juice
  • One pinch of salt

Preparation

Place the flour on the pastry board and form a well in the middle; add the rest of the ingredients a little at a time, mix till evenly distributed, then shape the dough into a ball. Cover the dough with plastic wrap and let it rest in the refrigerator for 1/2 hour. Roll out the dough with a rolling pin to a thickness of approx. 1 cm. Cut-out the cookies (use cookie cutters), and place them on a sheet pan lined with parchment paper.
Bake at 180° C for 15 minutes. Cool before serving.

They are delicious with a cup of Earl Grey Tea
