Morocco: Hummus

Ingredients (serves 4)

  • 50 gr of boiled chickpeas
  • 2 cloves of garlic
  • 2 spoons of tahin
  • juice of one lemon ( 3 tablespoons of Limmi lemon juice)
  • 1 sprig of parsley
  • 1 pinch of Cayenne pepper
  • 2 spoons of extra virgin olive oil
  • salt as needed

Preparation

Whisk the chickpeas, tahin, lemon juice, garlic cloves, and salt. If the mixture is too thick, add some water. Add the Cayenne pepper and whisk slowly, until you get a sufficiently smooth and well-blended mixture. Serve the dish decorated with chopped parsley and a thin layer of extra virgin oil. Serve with Arab bread and a nice side salad.

What’s Tahin?

Tahin, or Tahini, is a white food derived from sesame seeds, very spread in the Middle East. It is also called sesame butter or sesame cream. It has the aroma of peanuts, but it is less sweet and with a toasted taste.
