Spinach Hamburger

This vegetarian hamburger looks just like a regular meat hamburger.

You’ll need:

  • 500 gr spinach
  • 4 hamburger rolls (those topped with sesame seeds are the yummiest)
  • 2 potatoes
  • 1 egg
  • 2 tablespoons LIMMI lemon juice
  • 50 gr parmigiano cheese
  • 1 bunch parsley
  • A few lettuce leaves
  • 1 garlic clove
  • 2 tablespoons bread crumbs
  • Flour, salt, pepper, and extra-virgin olive oil to taste

Extras

  • Sliced caciotta cheese
  • Roasted potatoes or tomatoes

Preparation

Boil the potatoes (without peeling them), wash the spinach, boil them in salted water for about 10 minutes, drain, and dress them with the LIMMI lemon juice.

Once the potatoes are fully cooked (fork tender), peel them, and them put them through a food mill, together with the spinach.
Beat the egg with the parmigiano cheese, bread crumbs, finely chopped parsley, and garlic.  Pour this over the vegetables, add salt and pepper, and mix thoroughly. Shape the mix into 4 hamburgers, coat them with flour, and then fry them in hot oil until golden-brown on both sides.

Slice the buns in half, heat them up for a few minutes in a non-stick pan, or in the oven set at 180° C. Once the hamburgers are cooked, put a lettuce leaf over the bottom of each bun, place a spinach hamburger over it, and if you wish, top it with a slice of caciotta for extra flavour. Serve garnished with roasted potatoes or sliced tomatoes.
